It is impossible not to love bread , a universe made of leavening, proper cooking, fragrance. There are those who love to make it at home, time permitting, and those who prefer to rely on the hands of experts. But who are the best Italian artisan bakers ?

DISCOVER THE BEST ARTISAN BAKERIES

Dissapore has drawn up an interesting ranking, emphasizing some already well-known names. We have chosen three in particular. Among these is Antonio Lamberto Martino , judge of the last edition of Bake Off Italy. Sicilian, he now lives in Tuscany and, after discovering he had Crohn’s disease, he began studying the most digestible grains. A qualified agronomist, he has a degree in Food and Gastronomy Sciences and has worked over the years in many pastry shops and bakeries in Italy and Europe.

Ask the Milanese what they think of Panificio di Davide Longoni . A wide variety of stone-ground bread, pizzas, focaccias for all tastes, and for those with a sweet tooth there are tarts, croissants, biscuits and cakes. Davide, after all, is the son of an artist. Today the business is run by the third generation of the family who always aim for the highest quality. A curiosity: here the panettone is produced all year round.

Born in 1972, Carlo Eugenio Fiorani worked for years on the family farm, growing corn in monoculture. When the business was rented, he decided to work in the kitchens as an assistant cook. Little by little, he arrived at the professional kitchen, learning to prepare bread , to work pork and to transform agricultural products into preserves and jams. Today he has his own farm in Castelverde, in the province of Cremona, complete with a bakery where naturally leavened bread is produced and fields where wheat is grown for the production of flour and barley for beer.
