In Italian homes, bread consumption is decreasing but pizza is never missing . The data comes from an economic report by Italmopa presented at the Annual General Assembly in Milan during the Ipack-Ima fair.
BREAD CONSUMPTION, HOW ITALIANS BEHAVE
The analysis of the Associazione Industriali Mugnai d’Italia on the domestic market is clear: there is a clear reduction in flour intended for bread production, with consumption registering, in 2017, a contraction of 2.4% in volume. The decrease affected both loose bread and packaged bread. The consumption of frozen bread is instead increasing, with a growth of more than 10%. Pizza, on the other hand, knows no crisis, so much so that there is an increase in the use of flour for the production of pizza.
WHAT ITALIANS EAT
The demand for innovative, healthy products and products obtained from regional or local raw materials has grown between 10 and 30%. The volume of products from the milling industry, with an increase of approximately 49,000 tons compared to last year, has therefore settled at approximately 11 million tons. Which, translated into turnover, means a good 3.467 billion euros.
LONG LIVE PIZZA
The recent analysis carried out by the Confederation’s Study Center on data from Infocamere and Infoimprese has highlighted 127,000 businesses related to the world of pizza, of which 76,357 are actual catering establishments. There are then 40,000 restaurants-pizzerias and approximately 36,300 bars-pizzerias. Campania has 9,408 pizzerias, Lombardy 9,185.
What are the most popular pizzas? Traditional pizza continues to win and clearly surpasses gourmet pizza. The former, in fact, is chosen by 8 out of 10 Italians with a price range that in most cases does not exceed 7 euros. Round pizza conquers 93% of the market compared to pizzas by the slice and by the meter and is often accompanied by a plate of fried food. There are also those who dine with pizza and dessert, while a modest 6% orders two pizzas.
